Quick and Healthy Cream Soup
Cream Soups. One of the comforts of winter is a bowl of nice warm, satisfying cream soup. As the snow flies here today, it’s time to talk about winter worthy cream soups that are healthy, quick, easy and use either fresh vegetables or leftovers.

When I was working long hours as an accountant, I often would come home very, very late. A quick, light, but satisfying and healthy dinner was what I needed. I often made a creamy soup. I know, I hear you. You’re asking how a creamy soup can be healthy – or easy. Well, let me tell you how. I made my creamy soup in a high-speed blender but you could easily make it with a stick blender or even a standard blender.

In my Vitamix blender, I can put all the ingredients cold, set it on high, go change from my work clothes, and it’s done. With a stick blender or standard blender, you will need to warm your ingredients before blending. But again, this can be blending while you are changing or checking the kids’ backpacks (make sure the cover is tight, though). A blender will only feed 2, so if you have a family, a stick blender or putting the soup into a blender in batches will be the way to go.

Creamy vegetable soup on the quick. Great for leftovers. Great for a quick meal when you get home tired from work. And, did I mention, it's lower in calories?
- 2 cups chicken broth see notes below for options
- 1-1/2 cups vegetables such as broccoli, cauliflower, asparagus, or 1 cup potatoes, freshly steamed or leftovers
- 1/4 cup Greek yogurt
- 1 ounce cheese of choice about a 1-inch cube
- 1/2 inch fresh ginger, optional
- 1 tsp onion
- splash lemon juice, (don't use for potato)
- to taste salt and pepper

Steam vegetables, if not using leftovers

Put all ingredients in Vitamix, blend on high until steam comes out the top – about 8 minutes

Put all ingredients in a pot. Heat to a boil

Blend with a stick blender or in batches in a standard blender, being careful of the hot liquid

- Vegetarians, use vegetable broth or the “no chicken” powdered broth mix.
- If using broth powder, paste, granules, or cubes, prepare 2 cups broth per the instructions for your product
- Add herbs of your choice. Many people like oregano with cauliflower. For broccoli, I put in a little extra cheese and top with bacon crumbles. Although I've recently been told to eat potatoes for potassium, I don't normally eat them, so I don't yet have a recommendation for potato soup. Use your imagination, or what you'd use when making potato skins.
