No Bake Coconut Cookies
I am a cookie monster. I love cookies. What I don’t love is baking in the heat of summer – and this has been a hot summer so far. Try these no-bake coconut cookies from Dr. Axe made with healthful ingredients. They are GF if you use GF oats. Healthy fats. Honey instead of white sugar. In fact, since they aren’t baked, I’m going to use the raw honey I bought from Aldi’s. Get those extra benefits from raw honey!!
Dr. Axe says to keep these frozen. Having had a business selling energy bites to stores using many of the same ingredients, this LOOKS LIKE you could keep them in the fridge and they would stay solid. If you’re going on a picnic or taking these to a $th of July celebration, I would freeze them at least overnight and take them frozen in a solid container packed in a cooler surrounded by ice packs. They will need to stay cold to be solid, I know that for sure. And if they do melt, stick that solid container in the fridge as soon as possible – at least within 2 hours, then cut them like you would fudge once cold.
After I clean and organize my kitchen today (am repotting plants and doing maintenance on my Aerogarden) I think I’ll whip up a batch. I just happen to have lots and lots of almond butter….
