Thanksgiving Leftovers
Just a quick post here. Today is the last day to safely use or freeze your Thanksgiving leftovers. Take the time now to cube the meat to use in stir-fries, pot pies, creamed turkey, addition to chicken or turkey broth (if you used the bones to make broth the other day), etc. To preserve as many nutrients as possible, squeeze out as much air as you can or vacuum seal the bags before freezing. If you are using freezer containers, pack them tightly and up to the fill line, usually 1/2 – 3/4 of an inch to allow for expansion. Air deteriorates food in the freezer, so we want to get out as much as possible.

BBQ turkey sandwiches
Just add BBQ sauce or your favorite canned BBQ sandwich sauce.
Creamy Turkey Dish
You can make a white sauce (Bechamel), add meat, leftover carrots, peas, green beans, etc. and serve over leftover potatoes. If you have gravy leftover, you could even use that instead of, or as part of, the white sauce. You could mix the ingredients cold, put them in a greased casserole dish, bake 15 minutes, then put biscuits on top and bake until the biscuits are done. This is a cheater pot pie.
Going grain-free?
Whisk some eggs. Grease your cupcake tin. Drop leftover veggies in the cups. Pour over the beaten eggs. Bake at 350°F, for about 20-25 minutes. You can sprinkle with cheese the last 5 minutes if desired. If you have an accurate instant read thermometer, the temp should read 155°F for eggs.
