Cod Is a Heart Healthy Fish
BUT…usually it is served deep fried, which makes it an artery-clogging, inflammatory food.

According to French chef and certified food biochemist, George Mateljan, “cold water fish, like cod, have been shown to be very beneficial for people with atherosclerosis and diabetic heart disease. Studies show that people who eat fish regularly have a much lower risk of heart disease and heart attack than people who don’t consume fish.

“Cod, specifically, promotes cardiovascular health because it is a good source of blood-thinning Omega-3 fatty acids as well as an excellent source of vitamin B-12 and a good source of Vitamin B6, both of which are needed to keep homocysteine levels low…” I won’t bore you with all the details, but high homocysteine levels greatly increase the risk of stroke, and heart disease – even more than high cholesterol. This was proven about 25 years ago, although the mainstream public didn’t learn of this information.

How This Started
I got an Aerogarden on the Black Friday sale.
As you can see, it is growing an ABUNDANCE of dill! So I headed to the store to get some Cod.

Selecting the Fish
I was able to find some wild-caught Alaskan cod for a reasonable price at the store.

These pieces must’ve been from the tail end as they were thinner pieces. This changed the method of cooking. Normally I would bake the fish. But this fish would only take a few minutes to cook on the stovetop, even from frozen.

Cooking The Fish
I melted some butter and coconut oil in the frying pan (A little too much, oops). You can either flip the fish while it’s cooking or brushing it with some of the melted butter. I opted to brush it with the melted butter, then flip it anyway. These were quick flips – about 2 minutes apart.

Meanwhile, I Prepared the Seasoning
For the seasoning, I snipped some of the dill with a kitchen sheers…

Then I zested about 1/4 of a lemon for the 1/2 pound of fish I was cooking.
I also added some Fox Point Seasoning – the same blend sold by The Spice House as The Lake Shore Drive Seasoning Blend.
This is a great – ah, make that AWESOME – blend. It has the salt, so you won’t need to add salt. Then it’s all your aromatics: shallots, garlic, onion, chives, and scallions. It also has ground green peppercorns. This is a VERY mild pepper. Much milder than black pepper. In fact, I couldn’t even taste it in anything that I’ve made with the blend. If you want a pepper bite, add some ground white pepper.

Season
When you flip the presentation side back up, add the seasoning. Then allow the seasoning to flavor the fish as it finishes cooking.
When is Fish Done
Technically, fish is done when it reaches 145°. But these thin pieces are easy to tell when they are done. They will turn milky white and if you broke it at the thickest part, it would flake easily. With practice, you will know when it’s done. Overdone fish is dry and rubbery, so try to catch it just as if finishes turning milky white.

And that’s it. You are done in about 8 minutes from frozen. Enjoy!!
